Sweet potatoes are one of the richest sources of beta-carotene, which the body converts to vitamin A — essential for maintaining the integrity of mucosal barriers (your first line of immune defense). One medium sweet potato provides over 400% of your daily vitamin A, plus 37% of vitamin C and significant potassium. Clinical research shows vitamin A deficiency impairs innate immunity and weakens antibody responses to vaccines.

Preparation
