Oat beta-glucan is one of the few foods with an FDA-approved health claim for reducing cholesterol. A meta-analysis of 28 RCTs confirmed that 3 g/day of beta-glucan reduces LDL cholesterol by 5–10%. Oats also provide iron (20% DV), magnesium (supports blood vessel relaxation), zinc (immune function), and B vitamins including thiamine and folate. The soluble fiber forms a gel in the intestines that binds bile acids, forcing the liver to use cholesterol to make new bile.

Preparation

Cook ¾ cup of rolled or steel-cut oats (provides ~3 g beta-glucan). Top with walnuts, blueberries, and cinnamon for additional heart benefits. Can also use oat bran (higher beta-glucan concentration).

¾ cup oatmeal daily (3 g beta-glucan). Steel-cut and rolled oats are equally effective; instant oats have slightly less fiber.
